Description

A trace element deficiency in farm soil could cause crop deficiencies of vitamins that require the element for biosynthesis. Bioinformatics analyses have linked specific dietary vitamins and elements, especially magnesium (Mg), to obesity. This analysis of biosynthesis pathways and cofactor data shows that Mg also is required to synthesize most obesity-related vitamins. Initial data suggest a potential effect of soil Mg on selected B vitamins in crops. Three mechanisms could link soil nutrient deficiencies to obesity.

Learning Objective: After participating in this session, the learner should be better able to:
1. Describe how an investigator can use the KEGG and Brenda bioinformatics databases to connect soil health to human health
2. List three general mechanisms by which poor soil health could promote obesity
